One thing you quickly discover as an athlete is that doughnuts and chips are not the fuel of champions, or even just your weekend athlete. To have energy and grow your physical abilities you must include a proper diet, and it is hard to learn how to do that since very few of us know how to eat like an athlete. Carrot Soup

(HerbWise: Growing Cooking Wellbeing by Bruce Burnett). 2 pounds of carrots, chopped
1 diced onion
2 cloves of garlic
4 tablespoons of butter
6 cups of vegetable broth
Grated nutmeg
6 sprigs of fresh parsley, three sprigs of fresh thye or 1 teaspoon dried thyme, and six black peppercorns, all bound in something that can be easily removed after cooking. A cheese cloth can work for this.
Salt and pepper to taste.

Saute onion and garlic in the butter. Add the broth and carrots and simmer 15 minutes. Add the bundle of herbs and continue to simmer for about 15 minutes. Add the bundle of herbs and continue to simmer for another 20 minutes. Remove the herbs. Allow the soup to cool and put it through a blender in batches. Reheat the soup over low heat while adding the mace or nutmeg and salt and pepper to taste. Serve with some fresh, homemade bread and garnish with some fresh parsley and a little chopped fresh thyme.
